Broccoli Casserole

This is actually another of my husband’s recipes because he grew up eating broccoli casserole. I had only eaten broccoli and cheese a few times in my life before eating this as a casserole. Our daughter, who loves her veggies (usually), loves this casserole more than broccoli and cheese. This is such a good dish to go along with a turkey or ham dinner.

Ingredients:
~ Two to three 10-oz. bags of broccoli
~ 1 can of cream of mushroom soup
~ 1 small chopped onion
~ 1 cup of mayo
~ 1 egg
~ 2 cups of shredded cheddar cheese
~ 1 sleeve of Ritz crackers

Directions:
~ Boil the broccoli until tender and drain.
~ Mash the broccoli and add the cream of mushroom soup, chopped onion, mayo, egg, and crackers and mix.

~ Place mixture into a greased dish and top with shredded cheese.
~ Bake at 375 degrees for 45 minutes.
