Here in the South, macaroni and cheese is a staple side dish. This baked macaroni, or “macaroni pie” as we call it here in the South, is a great side dish for holiday dinners and is so cheesy and delicious.
~ 2 cups of elbow macaroni, cooked and drained
~ 2 cups of milk
~ 2 eggs
~ 1/4 cup of melted butter
~ 3 cups of shredded cheese
~ 1-2 tsp. of salt
~ Preheat oven at 400 degrees.
~ Boil the elbow noodles as directed on the box and drain when done.
~ Whisk your eggs, milk, butter, and salt in a bowl.
~ Spray your pan, put a layer of noodles in the pan, and add a layer of cheese on top. Keep layering the noodles and cheese until you run out.
~ Pour your egg and milk mixture over the noodles. You may have to gently stir to make sure your milk mixture is mixed in well with the noodles and cheese.
~ Cover with foil and place in the 400-degree oven and bake for 40-45 minutes.
This is such a delicious dish that goes with most meats or meals. We make it for Thanksgiving and Christmas and other holiday dinners. Because we mostly make it around the holidays, my daughter called it “Thanksgiving macaroni” for a while. I hope when you make this dish for your family that they love it as much as my family does.
