This is a delicious recipe to make when you want chicken but your family is tired of fried or grilled chicken. It is my variation on a copycat recipe of Olive Garden’s chicken parmesan I found a few years back.
~ Chicken breasts or thighs (I use 3 or 4 pieces of chicken because there is only 3 members in my family)
~ 2 eggs
~ 1 cup of flour
~ 1/3 cup of parmesan
~ 1 tsp. of salt
~ 1/2 tsp. of pepper
~ Marinara sauce ( I prefer Barilla but you can use whatever sauce you like)
~ Mozzarella sauce
~ Preheat your oven to 425 degrees.
~ Scramble 2 eggs in a bowl big enough for your chicken pieces. You can also add 2 or 3 Tbsp. of milk to your egg mixture.
~Mix your flour, salt, pepper, and parmesan in a separate bowl from the egg mixture.
~ Dredge your chicken in the egg mixture and then the flour/parmesan mixture.
~ Spray your pan and spoon about half the marinara sauce into your pan.
~ Heat some oil in a frying pan over medium heat. Place your chicken in the frying pan and fry each piece about 3-5 minutes on each side. They should be a nice golden brown color on the outside, and of course, they will not be thoroughly cooked because they will finish cooking in the oven.
~ Place your chicken into your sauced pan and spoon the rest of the sauce on top of each piece of chicken.
~ Bake in the oven about 20-25 minutes. Cooking time will vary depending on if your chicken is bone-in and how thick it is.
~ About 5 minutes before it finishes cooking, add mozzarella cheese on top of each piece and bake for another 5 minutes.
~ Serve with your side of choices (alfredo noodles, garlic bread, etc.)
